If you happened to read my post How to Roast a Chicken, I mentioned that I would be posting some recipes that use the leftover chicken. Here's one for you! If you don't have leftover chicken, any kind of cooked or grilled chicken would work just fine on this pizza.
Ingredients:
1 uncooked pizza dough disc (either purchased or homemade)
1/2 cup BBQ sauce (see recipe below)
1 cup cooked chicken
2 cups mozzerella cheese, shredded
1/4 cup sliced red onion
fresh cilantro, optional
Roll out the pizza dough to approximately 12" in size. Spread BBQ sauce over entire crust. Place red onions and chicken evenly on top of sauce. Sprinkle with cheese. Then, top with cilantro. (I don't happen to like cilantro, which is why only half of this pizza has it).
Bake at 450 for approximately 15 minutes.
BBQ Sauce recipe adapted from Betty Crocker
1/2 cup ketchup
1/4 cup water
3 tablespoons packed brown sugar
2 tablespoons white vinegar
1/4 teaspoon liquid smoke
Heat all ingredients to boiling in a small saucepan; reduce heat. Simmer uncovered for 15 minutes, stirring occasionally.
Caleb loves BBQ pizza - I'll have to try this for him. What is liquid smoke? And what aisle of the grocery store is it in?
ReplyDeleteI thought someone might ask that :) Liquid smoke is just a flavoring, basically, that gives something that 'smoky' taste. I think you can find it in the spice aisle--it's been awhile, but I'll get you an answer on that one specifically soon!
ReplyDeletemade this for dinner last night and it was SO yummy!! thanks for sharing the recipe! one of our favorite restaurants has BBQ chicken pizza and this is the closest recipe to it that we've found. now...if i can just convince my husband to try to caramelized onion and red potato pizza... :-)
